Taste of the Week: Matzoh ball soup from Lindsay’s Boulder Deli

New York-born and raised in Atlanta, Lindsay Shaw wanted to represent her Jewish roots at Lindsay’s Deli through sandwiches and her family’s matzoh ball soup recipe. 

One spoonful made me smile, because it tastes exactly like the traditional soup is supposed to taste — without any superfluous spices or toppings. The seasoned chicken broth is rich but not murky, with a healthy slick of chicken fat floating on top. The soup is thick with chunks and shreds of dark and white chicken meat and properly diced carrots, celery and onions. The piece de resistance is a large matzoh ball dumpling that is spoon-tender, not rubbery.  

This bowl of comfort has its own history since Boulder’s most famous matzoh ball soup was once served just up the block at the legendary New York Deli.
