Just when I thought I couldn’t improve on my fantabulous, melt-in-your-mouth butter cookie, I came up with this week’s treat, and, man, if I didn’t blow myself away.

So, with this theme song on constant repeat in my head, time to sing loud and proud about the treat this week: Frozen Chocolate Peanut Butter Pie. I know you want to sing “God Bless America” right about now, but “God Bless Dessert Diva” will suffice. This pie is delicious. Cools you off, tickles your taste buds and doesn’t take any time to make.

I must keep my body temperature down, and if I have to drink a spritzer to do so, so be it. (Who wants refreshing, good-for-you water anyway?) Another thing I can do to help remedy the heat is a no-bake dessert. Yes please! No-Bake White Chocolate Peanut Butter Squares. Keep those ovens off, people.

I guess I shouldn’t complain about fitting into my swimsuit when I’m busting out desserts that nowhere have sugar-free, low-fat or fat-free in the title. See, I always say eat one, not 10.

Yippe! I got an invitation to a pool party from a lovely Boulder Weekly reader. They remembered my request for a boat ride last year and thought this was the next best thing. How nice was that? It did however, just like my bikini, come with strings attached. You guessed it — I have to bring the desserts, four to five to be exact.

I’m making one of my favorites this week — Mint Chocolate Chip Ice Cream. Nothing fancy, just straight-up good. I’m using 2-percent milk along with the heavy cream to lighten it up a bit, but feel free to go balls to the wall and use full-on whole milk. I’m not the boss of you! I use pure mint extract. If you can’t find that — shouldn’t be a problem — use peppermint extract. It is refreshing and also pairs with the chocolate chunks famously. I like my chocolate in chunks and not chips, FYI. Thought that was very important to point out.

Wow, the heat must have really gone to my head, or perhaps it was the bourbon, but either way, summer is here, the heat is on. I’m not complaining for once, and I have no-bake treats up the ying yang, to keep your kitchen cool. The “Hell, yeah, we don’t need our oven” recipe of the week is Fresh Blueberry and Banana Popsicles.

Now that summer is officially here, we need a tasty treat to refresh and remind us to slow down and enjoy the season, to take us back to a time when ladies wore big hats and sipped lemonade on the front porch all afternoon. All right, I don't know why this dessert has conjured up those images for me.

You know last week how I was telling you about my love for Green & Black’s Organic chocolate bars, and my favorite Chocolove bars? Well, what’s a girl to do with all that leftover chocolate when she is feeling creative and non-PMS? I think Chocolate Date Truffles is the answer.
