Frozen Chocolate Peanut Butter Pie

So, with this theme song on constant repeat in my head, time to sing loud and proud about the treat this week: Frozen Chocolate Peanut Butter Pie. I know you want to sing “God Bless America” right about now, but “God Bless Dessert Diva” will suffice. This pie is delicious. Cools you off, tickles your taste buds and doesn’t take any time to make.

No-Bake White Chocolate Peanut Butter Squares

I must keep my body temperature down, and if I have to drink a spritzer to do so, so be it. (Who wants refreshing, good-for-you water anyway?) Another thing I can do to help remedy the heat is a no-bake dessert. Yes please! No-Bake White Chocolate Peanut Butter Squares. Keep those ovens off, people.

Triple Berry Spoon Cake

Yippe! I got an invitation to a pool party from a lovely Boulder Weekly reader. They remembered my request for a boat ride last year and thought this was the next best thing. How nice was that? It did however, just like my bikini, come with strings attached. You guessed it — I have to bring the desserts, four to five to be exact.

Mint Chocolate Chip Ice Cream

I’m making one of my favorites this week — Mint Chocolate Chip Ice Cream. Nothing fancy, just straight-up good. I’m using 2-percent milk along with the heavy cream to lighten it up a bit, but feel free to go balls to the wall and use full-on whole milk. I’m not the boss of you! I use pure mint extract. If you can’t find that — shouldn’t be a problem — use peppermint extract. It is refreshing and also pairs with the chocolate chunks famously. I like my chocolate in chunks and not chips, FYI. Thought that was very important to point out.

Fresh popsicles

Wow, the heat must have really gone to my head, or perhaps it was the bourbon, but either way, summer is here, the heat is on. I’m not complaining for once, and I have no-bake treats up the ying yang, to keep your kitchen cool. The “Hell, yeah, we don’t need our oven” recipe of the week is Fresh Blueberry and Banana Popsicles.
