TWISTED NEW YEAR’S EVE

Twisted Pine Brewery in Boulder is hosting a “Brew Year’s Eve” prix fixe menu on Dec. 31 from 5 to 8 p.m.

For $24.95, guests will enjoy a Blonde German Pale Ale as an aperitif, followed by a first course of broccoli beer cheese soup, a salad, an entrée of lemon garlic chicken and a dessert of local chocolates, each course served with a beer that complements the accompanying flavors.

HIGH-ALTITUDE BAKING WITH LOCAL EGGS

Preparing and eating holiday desserts is common at this time of year. However, baking in Colorado’s high altitude can be a challenge for your cookies and cakes, so the Colorado Egg Producers (CEP) Association is offering some tips.

CEP, a membership organization representing seven farms, promotes the purchase of Colorado produced eggs.

The following tips are courtesy of joyofbaking.com, baking911.com and ochef.com.

• The main factor affecting baked items in high altitudes is lower pressure. This leads to lower boiling points, faster evaporation of liquids and more rapid rising of batters when baked. Basic adjustments and a little experimentation can compensate for higher altitudes.

• Reduce the amount of baking powder the recipe calls for. For each teaspoon decrease 1/8 – 1/4 teaspoon.

• Reduce the amount of sugar the recipe calls for. For each cup decrease 2-3 tablespoons.

• Increase the amount of liquid the recipe calls for. For each cup add 3-4 tablespoons. Eggs and butter are considered liquids.

• Fill baking pans half-full, not the usual two-thirds, as high-altitude cakes may overflow.

• Increase the baking temperature 15-20 degrees, unless using a glass pan, and reduce the baking time by up to 20 percent.

WAHOO’S CELEBRATES 25 YEARS

Wahoo’s Fish Taco, which has restaurants in Boulder and Longmont, will commemorate 25 years of bringing surf and food together in 2013. To celebrate the anniversary, Wahoo’s will offer special promotions every month throughout 2013.

New promotions will begin on the 25th of each month and will include offerings such as special discounts, new menu items and a visitor reward program tailored to loyal and new customers alike.

“The combination of our love for surf and food started out as a simple idea at a backyard party 25 years ago,” Wing Lam, co-founder of Wahoo’s, said of the restaurant’s Mexican/Brazilian/Asian menu delivered with a Hawaiian North Shore vibe.

There are 65 Wahoo’s locations throughout the nation, including stores in California, Colorado, Texas and Hawaii — with new locations recently opened in New York, Nebraska and Nevada.
